1/4 cup Mayonaise Use a vegan mayo to keep the recipe plant-based
2 tablespoons Yellow Mustard You could also mix 1 tbs yellow mustard with 1 tbs dijon mustard
1 tablespoon Garlic powder

      This simple potato salad is sure to satisfy if you’re in the mood for something creamy and zest.

      With only 5 main ingredients, this dish can come together in under 20 minutes. Serve it as a side or eat it on its own (no judgement here).

      This recipe comes together in 3 simple steps:

      1. Clean, dice, and cook the potatoes of your choice. Tip: In the Cancer Bites kitchen, I use the Fullstar Vegetable Chopper to cut down on vegetable chop and prep time. Cook the potatoes by boiling on the stove or with a pressure cooker. This recipe was prepared using the Ninja Foodi 9-in-1 pressure cooker to avoid the hassle of boiling potatoes and draining.
      2. In a large bowl, mix the cooked potatoes with the remaining ingredients: (vegan) mayo, yellow mustard, garlic powder, and dill.
      3. While this recipe is delish on its own, see the recommended add-ins below to kick it up a notch and customize to your preference.

      Dice and cook potatoes

      Thoroughly clean your potatoes by rinsing in water and scrubbing the skins to remove dirt. Optional: peel the potato skins at this time if you prefer or have trouble chewing the skins.

      Dice your potatoes into even-sized chunks to allow for quick and even cooking.

      Potatoes can be cooked by boiling on the stove top. Check after approximately 10 minutes.

      Alternatively, prepare potatoes with a pressure cooker by placing diced potatoes on a rack with 2 cups of water. Seal the pressure cooker and set cook time to 8 minutes (allow extra time for pressure to build). Quick release after cooking.

      Mix cooked potatoes with remaining ingredients

      In a large bowl, transfer the cooked potatoes and mix with the remaining ingredients: (vegan) mayo, mustard, garlic powder, and dill.

      Serve immediately for a warm and creamy dish. Optional: refrigerate for 30 minutes to serve chilled.

      Additional add-ins as desired

      This simple potato salad is great on its own. Kick it up a notch and make it your own with add-ins that you enjoy!

      Increase the mayo for extra creaminess.
      Add a bit more mustard and/or dill to make it zesty and tangy.
      Add salt and pepper to taste as desired. Garlic salt is a great option as well!
